“Aure” Enters a New Era
Aure reopens today following a three-month transformation of its historic 1745 gunpowder house on Holmen in Copenhagen. Behind the preserved façade, a refined new interior by Danish architect David Thulstrup sets the stage for the Michelin-starred restaurant’s next chapter.
The Michelin-starred Restaurant Aure has reopened following a three-month transformation of its historic home on Holmen.
Housed in a Grade A listed gunpowder house dating to 1745, Aure has been reimagined in collaboration with acclaimed Danish architect David Thulstrup. While the exterior remains untouched, the interior now features a striking open kitchen crafted from 510-million-year-old Gotland limestone, positioned as a monolithic centerpiece within the preserved wooden floors and original load-bearing columns.
Since opening in 2024 under owners Nicky Arentsen and Emma Nørbygaard, Aure has moved at remarkable speed–earning a Michelin star just 81 days after launch, securing investment from Michael Lund Petersen of Polar Bear, and appearing in an international documentary series by Gordon Ramsay on Apple TV in autumn 2025.
The renovation marks a new chapter for the 35-seat restaurant, which now also includes a private dining room for up to 16 guests on the first floor. Despite the architectural evolution, Aure’s culinary philosophy remains unchanged: a seasonal tasting menu rooted in nature’s finest ingredients from small-scale producers.
To mark the reopening, dishes such as Danish wagyu and king crab return to the spotlight–now served in a setting designed to bring guests closer than ever to the heart of the kitchen.
