David Piquet assumes the role of Head of Sommellerie at the three-Michelin-starred restaurant Le Cinq, located in the Four Seasons Hotel George V, Paris. At 32, he succeeds Éric Beaumard and will oversee one of France’s most celebrated wine lists.

There has been a change in a key position at the Four Seasons Hotel George V in Paris: Since February 16, David Piquet has been leading the sommelier team at the three-Michelin-starred restaurant Le Cinq. The 32-year-old succeeds Éric Beaumard, who shaped the establishment for decades as Director and Head Sommelier before retiring a few months ago. Together with three-star chef Christian Le Squer, Piquet now oversees a team of six.

Hailing from the Toulouse region, Piquet grew up in a family where shared meals and discussions about ingredients and origins were central. His grandmother’s cooking and her connections with local winemakers sparked his early interest in food and artisanal production. Upon his entry into the hotel industry initially, he developed a deep affinity for wine.

A formative stage of his career took him to Lancashire, England, where he gained international experience at Northcote Manor and honed his tasting skills. Back in France, he worked at leading three-star hotels, including Les Prés d’Eugénie. In 2019, he became Head Sommelier at La Villa Madie, where his work on the wine program contributed to the restaurant earning its third Michelin star in 2022.

When the Four Seasons Hotel George V began searching for a successor to Éric Beaumard in 2025, Piquet was the natural choice. The role is regarded as one of the most prestigious in international wine service. “Being appointed Director of Wine at Le Cinq is the position of a lifetime,” says Piquet.

He plans to maintain the evolved style of the wine list while placing even greater emphasis on knowledge transfer and direct engagement with guests and winemakers. For Piquet, wine is not just an accompaniment to cuisine—it is a distinct and essential element of the overall dining experience.
