BLT - Bacon, Lettuce, Tomato - is a legendary combination in the USA. It also takes a classic cheeseburger to a whole new level of taste.

For the quick pickled cucumbers

Ingredients (4 servings)
100 ml Hesperide or apple cider vinegar
1 teaspoon(s) Salt
1 teaspoon(s) Sugar
0.5 tablespoon(s) Dill, finely chopped
0.5 Cucumber, cut into thin, round slices
Black pepper, ground

For the sauce

Ingredients (4 servings)
60 g Mayonnaise
40 g Ketchup
1 tablespoon(s) Tarragon mustard
30 g Cornichons, drained and finely chopped
1 teaspoon(s) Sriracha or Tabasco (optional)
Salt
Pepper

For the burgers

Ingredients (4 servings)
700 g Minced beef (preferably from the neck)
4 Thin slices of cheddar
8 Thin slices of smoked bacon
4 Brioche burger buns, sprinkled with sesame seeds, halved
Green leaf lettuce, tomato slices, red onion slices and gherkin (to serve)

  • For the gherkins, mix the vinegar, salt, sugar, pepper and dill until the salt and sugar have dissolved. Place the sliced cucumber in a glass jar. Pour over the vinegar mixture and make sure that the cucumbers are completely covered. If necessary, add a little more vinegar, close and shake. Leave to infuse in the fridge for at least 2 hours before serving.
  • For the sauce, mix all the ingredients together. Season to taste with salt and pepper.
  • Divide the mince into 4 portions of 175 g each and roll each piece into a ball with wet hands, then press into flat burgers. Dab the burgers with a little oil, season with salt and pepper.
  • Grill the burgers for 5 minutes over a medium-high heat. Turn and top with cheese. Cover the grill and grill until the cheese has melted and the patties are medium rare, about 4 minutes longer. Place on a plate and leave to rest for a few minutes.
  • Grill the bacon until it is crispy, then toast the buns. Top each bun with a spoonful of sauce, a burger, 2 slices of bacon, lettuce, tomatoes, red onions, gherkins and garnish with additional sauce.
