Cherry chocolate parfait

A delicious frozen dessert that can be made entirely without an ice cream machine.

The parfait will need several hours to freeze completely

Ingredients: 8 servings

Ingredients
400 g cherries, pitted (fresh or frozen)
150 g caster sugar
15 ml water
125 g dark chocolate (at least 50% cocoa, or more depending on preference), roughly chopped
6 arge egg yolks
250 ml whole milk
Seeds scraped from 1 vanilla pod
350 ml whipping cream, well chilled
for garnish Fresh cherries, chocolate shavings, and chopped toasted nuts

Preparation

Line a loaf tin with a capacity of at least 1½ litres with baking paper.

Place the cherries, 50 g of the sugar, and the water in a saucepan and bring to a gentle simmer, stirring occasionally. After about 5 minutes, the cherries should release enough juice to cover the fruit.

Blend the mixture using an immersion blender or food processor until smooth, then simmer over low heat for about 15 minutes until thick and syrupy. Pass through a sieve and set aside.

Melt the chocolate over a bain-marie or in the microwave.

Whisk the egg yolks with the remaining sugar until pale and creamy. Gently heat the milk and vanilla until steaming. Slowly pour into the egg mixture while whisking constantly. Return the mixture to low heat and cook for about 5–6 minutes, stirring continuously, until slightly thickened.

Mix half of the custard with about 125 ml of the cherry purée (reserve the rest for serving), and combine the other half with the melted chocolate.

Whip the cream until soft peaks form, then fold half into the cherry mixture and the other half into the chocolate mixture.

Pour the chocolate mixture into the prepared tin and freeze for about 30 minutes until slightly firm. Keep the cherry mixture chilled in the refrigerator during this time.

Pour the cherry layer over the chocolate layer and freeze until completely set.

Turn out the parfait, garnish with the remaining cherry sauce, fresh cherries, toasted nuts, and chocolate shavings, then serve.
