Italian Classic: Strangolapreti
Strangolapreti is a traditional Italian gnocchi made with budget-friendly bread and spinach.

| 1 | kg | stale white bread |
| 500 | g | spinach |
| 2 | eggs | |
| 100 | g | parmesan cheese |
| 100 | g | butter |
| olive oil | ||
| 500 | ml | milk |
| salt | ||
| pepper | ||
- Cut the bread into cubes and soak in lukewarm milk for 3 hours.
- Steam the spinach for around 2 minutes, chop and toss lightly in butter and season with salt, pepper and nutmeg.
- Add the grated parmesan cheese, eggs, salt and bread. Mix everything well with a wooden spoon and, if the mixture is too thin, add some breadcrumbs.
- Shape the mix into the desired form (balls, spoon shape or gnocchi-like) and place in boiling salted water for around 5-7 minutes
- When the dumplings float to the surface, take them out of the pan with a slotted spoon.
- Serve with plenty of parmesan cheese and foaming hot butter that has been infused with sage.
