The red wines Valpolicella, Valpolicella Superiore, Valpolicella Ripasso and Amarone are made from Corvina, Corvinone, Rondinella and Molinara grapes, the composition of which varies depending on the winemaker. For the king of wines, Amarone, the local grapes are dried until the January following harvest. After gentle pressing, the wines are aged for at least two years in wooden barrels, traditionally made from Slovenian oak, and one year in the bottle before being released for sale. Amarone Riserva must be aged for at least twice as long.
