Die Familie Yonezawa zog im Jahr 1856 nach Akashi City. Nachdem sie bereits die Kunst des Sake-Brauens beherrschte, begann die Familie 1917 mit der Destillation. Ein Jahrhundert später ehrt Kimio Yonezawa, der Master Blender und Destillateur des Hauses, sein Erbe und das 100-jährige Bestehen des neuen Zweiges im Familienunternehmen, indem er die Kaikyo-Destillerie und die Hatozaki-Whiskys kreierte. Alle Hatozaki-Whiskys sind das Ergebnis eines doppelten Blendings. Zuerst werden mehrere Whiskys ausgewählt, um den Basis-Blend zu erstellen. Diese Auswahl wird dann so lange wie nötig reifen gelassen. Ein Teil dieses Basis-Blends wird dann in der Kaikyo-Destillerie, die ihren Namen von der nahegelegenen Hängebrücke hat, mit anderen Whiskys in Fässer abgefüllt. Während dieser zweiten Stufe des Blendings werden verschiedene Arten von Fässern verwendet, wie Bourbon, Sherry, Sakura (japanische Kirsche) oder sogar Mizunara (japanische Weißeiche). Dieser Schritt ermöglicht es, zusätzliche aromatische Noten einzuarbeiten

Tasting from 02.11.2021: Benjamin Herzog, Erhard Ruthner, Roland Graf, Othmar Kiem, David Penker, Hermann Botolen, Daniel Ulicny, Heinz Karasek, Katharina Schwaller

A basic tart aroma is prominent in the nose, some pepper and grassy quince can be identified. The palate is kept quite slender, malt sweetness resonates in the background. Nice barrel spice in the finish.
