Tasting from 24.03.2026: Ulrich Sautter

100 percent Chardonnay from the village of Adong. Very fine wood, hazelnut, almond paste, varietal grain notes, very clear in everything. On the palate, the first thing that impresses is a very independent mineral component, salty and iodine-like, but with a completely different hue to that of Burgundy. A firm but civilized acidity carries the structure, which appears fine and transparent in a way, but also has power and length, and even subtle oily layers in the background. The hazelnut aroma returns on the finish, and the structure is slightly phenolic, pointed and very exciting.
