The single-varietal Xarel.lo comes from a tiny old single vineyard. 130 months on the lees result in a subtle, complex Cava in a class of its own. Delicately smoky mocha nuances, fine pastries, ripe apple, citrus zest, mineral nuances. Taut and complex, pleasant hints of pears, lively. Dust-dry food companion with certain ageing potential.
