Tasting from 26.05.2020: Ulrich Sautter
Initially still yeasty and savoury on the nose, then releasing more and more ripe berry fruit and the nutty tones of chestnut. On the palate, there is an excellent contrast between texture and full-bodied tension, ripe acidity provides support, and the intense tactile minerality carries the lime to the tongue. At the very end, the fruit is concentrated in a little sweetness. Completely old school in style, but excellently made.
