More about the tasting45% Chardonnay and 55% Pinot Noir, grown in the Les Folies vineyard around the Château de la Marquetterie, the ancestral home of the Taittinger family in Champagne. Some of the many separately vinified batches mature in oak barrels. After bottle fermentation, the wine remains on the lees for five years before disgorging. A very fine combination of wood and yeast on the nose, brioche and toast spice, medium-fine mousseux, well-integrated acidity, good volume in the mid-palate, balanced and harmonious, finishes mild, the minerality remains in the background.
