Tasting Notes
Caramel, roasted hazelnut and dried apricot. Creamy, silky on the palate, mild but carrying acidity, volume-giving but not over-emphasized sweetness, not overly concentrated, but in its fine, delicate harmony very suitable for culinary use: with oysters, but also with chicken in morel cream or chicken liver. Not quite sweet enough for desserts.
