77 months of yeast ageing. Delicate tertiary undertones, Pinot aromas, red berryish but also yeasty notes. The palate structure is highly complex and combines opposites: crisp acidity meets smoothness, fine, almost creamy mousse creates freshness and roundness in equal measure. This sparkling wine is mellow with very subtle fruit, shows excellent length and finishes salty.
