Apricot and some yeast. May turnip, undertones of spontaneous fermentation. Carbonic acid at the start, then muscular, very dry, with a highly dense texture, almond, closed, mineral finish. Challenging, interesting.
More about the tastingStill closed and a bouquet characterized by fermentation. Shows yeast spices and a handful of fresh herbs, including rosemary, tarragon and ribwort plantain. Builds up tremendous pressure on the palate. Firm fruit core and cool acid nerve. Very good length.
