Still some yeast on the nose, herbal notes from spontaneous fermentation, yellow and green apple, some malt, rocket and mustard seed. Lean and taut structure, initially with supple, soft development on the palate, then with good energy, emphatically dry, nice spice and grippy, cultivated phenolics. Strong character.
