Dark Balsamic Dressing
Balsamic dressing with red wine is the perfect match for Italian salad greens like arugula, radicchio and puntarelle, or with grilled vegetables.

| 140 | g | balsamic vinegar |
| 40 | g | red wine vinegar |
| 10 | g | old balsamic |
| 15 | g | red wine |
| 300 | g | water |
| 45 | g | sugar |
| 20 | g | salt |
| 1 | g | xanthan gum |
| 280 | ml | olive oil |
- Mix all the ingredients together.
- Let a few basil leaves steep in it for an hour, do not mix.
