The ecologist and saffron pioneer Bernhard Kaar has brought the centuries-old tradition of saffron cultivation back to the Wachau. After an interruption of almost 100 years, he is once again cultivating the precious saffron crocus in stone terraces in Dürnstein and Spitz using the old method. Every autumn, the ruby-red pistils of the lily-flowered saffron crocus are harvested by hand in the early hours of the morning and processed into delicious saffron products in the Wachau Saffron Manufactory at Dürnstein railroad station.
