Star chef Björn Frantzén opens two new restaurants in Atlantis, The Palm

Swedish Michelin-star chef Björn Frantzén will open two new restaurants in Dubai in 2023, Studio Frantzén and a fine-dining concept.

The luxury hotel Atlantis, The Palm is joining forces with one of the most famous chefs in the world. With Studio Frantzén, Swedish star chef Björn Frantzén will present two concepts in one place. Highlights from Nordic cuisine will be served, along with a more intimate fine-dining restaurant where Nordic cuisine will be combined with Asian influences, effectively bringing together the chef's two three-star restaurants, Frantzén in Stockholm and Zén in Singapore.  

Two concepts under one roof 

In Studio Frantzén, guests can look forward to à la carte menus with dishes such as Porterhouse Steak or Blistered Lobster with curry hollandaise, pomegranate mirin, dried cloudberries, ginger and coriander butter, which can be eaten in private cabins. In this part of the new restaurant concept, there will be a particular emphasis on distinctive flavours and creations that focus on ingredients.

The famous Frantzén fine-dining concept is located in the same premises, offering impressive views of the Dubai skyline at night from an elegant rooftop orangery. Nordic dishes are reinterpreted in this part of the restaurant, Japanese Kaiseki style and refined with French techniques. Here, diners can expect crudo of scallop with salted Tokyo turnip, king crab grilled over birch embers with hot sauce, or spiced venison with blood orange and foie gras butter. There will also be a selection of 1,500 wines, including Grand Crus.

Studio Frantzén can seat up to 220 guests, while the fine dining concept has a private dining room for up to 25 people. The opening is planned for the fourth quarter of 2023.
