Falstaff went in search of the best Kaiserschmarrn in the province of Salzburg.

Kaiserschmarren is undoubtedly one of the most famous desserts in Austrian cuisine. There are many stories surrounding the origins of this traditional dish: An encounter between Emperor Franz Joseph I and a cook in the Tyrolean Alps is said to have been the decisive factor. The story goes that one day the emperor stopped at a humble hut and asked for a sweet dish. The chef, who had the honor of cooking for the emperor, prepared a pancake. However, during the roasting process, it unfortunately tore and was cut into pieces. Despite the mishap, the emperor is said to have enjoyed the torn pancake and asked curiously for his name. The chef's spontaneous answer was: "That's a Kaiserschmarrn".

"Just give me the Schmarrn"

Another attempt at an explanation: a court confectioner who specialized in preparing light desserts for the body-conscious Empress Elisabeth tried his luck with a new creation made from omelette batter and stewed plums. But the empress was not impressed. In this awkward situation, her husband intervened and tasted the portion that the empress had refused, saying: "Well, then give me the Schmarrn that our Leopold has cooked up again."

Be that as it may, the dessert is definitely popular these days. Falstaff went in search of restaurants and eateries in Salzburg that serve the dish in exceptional quality.
