Grilled Trout with Lime & Thyme

We reveal how to cook trout on the grill, using a grill basket as an aid.

Ingredients (2 servings)
2 twigs thyme
2 tablespoon(s) herb butter
1 pinch(es) sea salt
2 trout (400g each, gutted and ready to cook)
1 pinch(es) freshly ground black pepper
1 lime (cut into 6 slices)
  • Rub the trout inside and out with sea salt and pepper. Spread the herb butter inside the cavity of each trout and place a sprig of thyme and three lime slices inside each fish.
  • Cover the trout and leave to rest in the fridge for about an hour.
  • Preheat the grill for indirect heat (180°C).
  • Place the trout in the grill basket and secure it in place. Grill for about 20 minutes until the fish are cooked and the flesh is flaking (core temperature 58 to 60°C).
