Sicilian top chef Ciccio Sultano surprises with the fresh "Insalata di Arancia con Sgrombo".

Ingredients (4 servings)
2 Tarocco oranges
2 Blood oranges
2 Sicilian lemons
30 g Parsley
Chili pepper
100 ml Ice water
150 ml Olive oil, extra virgin
2 Spring onions, washed and trimmed
Salt
2 can(s) Mackerel fillets in oil "Testa Conserve"
  • Peel and fillet the oranges and lemons with a sharp knife. Cut the spring onions diagonally into thin strips and place in ice water. Cut the chili pepper into very fine rings and finely chop the parsley. Remove the spring onions from the ice water and drain on kitchen paper.
  • Mix into the citrus fruits together with the chili and parsley. Marinate with the olive oil and a little water and season with salt. Leave to infuse for a while.
  • Carefully remove the mackerel fillets from the oil and serve.

The salad also goes perfectly with sausages and grilled meats.
