Antwerp’s Three-Michelin-Starred Zilte Takes Over Tivoli’s Pagoda for Exclusive Copenhagen Residency
This autumn, Copenhagen’s dining scene welcomes one of Belgium’s most celebrated culinary destinations: Zilte. From 2 October to 1 November 2026, the three-Michelin-starred restaurant will embark on an exclusive month-long residency at Tivoli Gardens, taking over the iconic The Pagoda.
At the helm is chef Viki Geunes, whose cuisine has earned international acclaim for its refined precision, artistic sensibility, and deeply personal interpretation of ingredients. Rather than being rooted in geographical tradition, Geunes’ cooking is shaped by creativity and seasonality, with dishes that explore multiple dimensions of a single product through contrasts in texture, temperature, and flavour.
Seafood and vegetables play a central role in the Zilte universe, elevated through meticulous technique and presented with striking visual elegance. Yet behind every intricate composition lies intention rather than ornamentation — a balance that has become synonymous with the Antwerp restaurant’s identity.
The residency at Tivoli offers guests a rare opportunity to experience one of Belgium’s gastronomic jewels in the heart of Copenhagen. Throughout the month, diners can choose between a five-course lunch menu, served from Friday to Monday, and a seven-course dinner menu, available from Thursday to Monday.
Wine pairings have been curated by Head Sommelier Aaron Moeraert, with an additional luxury pairing available for guests seeking an even more elevated experience.
