“Mr. Bronck” Arrives at Sheraton Stockholm

A new restaurant begins to take form at the Sheraton Stockholm Hotel this spring. “Mr. Bronck” is a produce-driven concept rooted in Swedish ingredients, drawing nuanced inspiration from classic American cuisine. With an emphasis on flavor, craft, and balance, the restaurant aims to become a calm yet self-assured presence within Stockholm’s dining scene.

At the Sheraton Stockholm Hotel, the ongoing transformation now finds its most expressive form in the kitchen. Following a year of architectural renewal and vibrant new social spaces, gastronomy moves to center stage with the opening of Mr. Bronck in March. Conceived not as a hotel restaurant in the traditional sense, it presents itself as a culinary destination with its own rhythm, ambition, and culinary identity.

The name Mr. Bronck carries a distinctly transatlantic resonance. Jonas Bronck, the Swedish-born pioneer, whose name ultimately defined New York’s Bronx, offers more than historical context—his story serves as a symbol of exchange, reinvention, and curiosity. Those same themes run through the menu, where American classics are reimagined through Swedish produce, seasonality, and restraint. The cooking is generous yet disciplined, favoring depth over opulence and flavors that linger rather than overwhelm.

At the helm is Executive Chef Pontus Wellén, whose cooking blends technical precision with an instinctive respect for ingredients. With over 25 years of experience and recognition including bronze at Bocuse d’Or Sweden 2025 and a semifinal placement in Årets Kock, Wellén champions clarity over elaboration. His dishes are structured, confident, and quietly expressive—showcasing technique as a means to elevate flavor, not dominate it. Previous leadership roles at Nordic Light Hotel and Hotel C Stockholm helped shape his distinctly modern perspective, now refined into a balanced Nordic-American dialogue.

“We work with bold flavors, but always with a light hand,” Wellén says. “It’s about respect—for the ingredient, for the craft, and for the guest. American cuisine has confidence at its heart, and when that confidence meets Swedish precision and raw materials, something truly engaging happens.”

The experience extends into the dining room, overseen by Chef Sommelier and Restaurant Manager Janni Berndt Dahl. One of Sweden’s most esteemed wine professionals—and a Chevalier de L’Ordre des Coteaux de Champagne—Dahl approaches wine as a seamless continuation of the kitchen. Her selections emphasize balance, texture, and freshness, with pairings crafted to elevate, never overshadow, each dish. Her distinguished background includes curating the wine program at Spesso and leading Edsbacka Krog as both general manager and wine director.

Located on the ground floor of the Sheraton Stockholm Hotel, Mr. Bronck will seat around 80 guests, complemented by a private dining room for up to 12. Open daily for dinner and serving lunch on weekdays and weekends alike, it aspires to be a destination defined by flavor, confidence, and quiet ambition—where Swedish produce meets American soul, and gastronomy is given the space to unfold at its own pace.
