Blanc de Noirs are sometimes complicated wines: of course, they are generally Pinot Noirs – but they offer the fascination of Pinot Noir in the most abstract way: without color, without tannin, but with acidity, with minerality, with the aromatic components of yeast – and with carbonic acid to boot.
