Ingredients (4 servings)
1 Lemon (peel)
2 cm Ginger piece
1 teaspoon(s) Earl Grey tea loose
200 ml Boiling water
1 tablespoon(s) Honey
1 teaspoon(s) Soy sauce (e.g. Kikkoman)

125 ml Gingerberry
1 Lemon
1 Lemon (juice)
Ice cubes
  • Peel the lemon with a peeler and squeeze out the lemon juice. Cut the ginger into thin slices.
  • Bring the water to the boil. Put the loose tea, ginger and lemon peel in a teapot and pour boiling water over it. Add the honey and soy sauce and leave to infuse for a few minutes.
  • Chill the tea.
  • To serve, cut the lemon into slices. Peel the lemon and squeeze out the lemon juice. Fill glasses with ice cubes, lemon zest and slice. Pour in cold tea and pour over gingerberry. Serve immediately.
