Sanctum is a boutique family winery based in Štajerska, Slovenia. The name itself means "something hidden and sacred". The vineyards are quite hidden in the hills above the town of Loče, which has a long history of winegrowing and winemaking. Carthusian monks in the 12th century laid the foundations for this history, and so the name of the vineyard is also associated with the holy. All the vineyards are located on steep south-facing slopes on predominantly marl soils. The predominant grape variety is Pinot Noir, which is joined by Chardonnay and Syrah. The latter thrives particularly well in this location due to the cool climate. "We believe in respect for the land, sustainable viticulture and winemaking with minimal intervention. Our grapes are harvested by hand and we avoid additives in the wine cellar. Our wines are made by spontaneous fermentation with natural yeasts in French or Slavonian oak barrels." What reads like a profession of faith is one, but not in relation to a religion, but out of respect for nature and its products. The aim of the Sanctum winery is therefore to produce wines that are a true expression of the unique terroir: elegant and purist.
