Tasting Notes
A touch of grilled cashew shows the most evolution so far on the nose, alongside an edge of caramel and tart yellow apple. The palate, on the other hand is vividly fresh and shows a depth of miso, of slow-cooked duxelles, a certain saltiness, a rounded, savoury generosity. An atypical Clos St Hilaire made for the table.
