Tasting Notes
A complex bouquet with aromas of plum, fig, violet, sweet spices such as vanilla and liquorice as well as undergrowth, mushrooms and moss. Full-bodied and mouth-filling on the palate, supported by a delicate mousse. A good balance between acidity and dosage, with a finish of savoury, yeasty roasted flavours of baked rye bread, candied kumquat and good length. (RE).
More about the tastingMedium golden yellow with silver reflections and a fine, stable mousse. A delicately smoky and nutty bouquet, with ripe stone fruit, some jasmine and orange blossom and fine roasted aromas of cookie too - lots of Bolly DNA already in the nose. Tight-knit on the palate with white pear fruit and some walnut on display, with a fine acidity and taut minerality on the finish. Shows length already, should ideally age in the bottle for a few more years. (Disgorged 10/23, PM).
