This needs a while to open up, but the rich, biscuity notes are absolutely worth the wait, perfectly tempered by vivd, brisk, pure lemon. The palate has a wonderful directness and a beautiful but sinuous concentration. The mousse is fine and persistent, rounded, fresh and with wonderful verve.
