Tasting Notes
Colour is golden, almost verging into deep amber. The intense nose has a hint of grilled cashew, of Parmesan rind, of the smouldering of a just extinguished candle, hot candlewax, dried fig and burnt oyster shell. The palate has an incredible savouriness that is like spiced soy sauce with a tender, smooth, gently creamy texture of immense richness. The clash of caramel, soy sauce and salt, of fenugreek and cashew,is incredibly resonant, salty, intense. It finishes with an otherworldly freshness with an endless, super-salty finish. Incisive, incredibly memorable – leaves a super-clean palate.
