Tasting from 02.06.2021: Ulrich Sautter

Strong with the first tones of maturity in the colour. Very reductive aroma, almond. Then also candied orange peel. Very supple and round on the palate, but also homogeneous with a delicate phenolic impression, oily base, fine nerve, a finely chiseled and yet very expressive wine. Will benefit from a carafe. And has a wide range of gastronomic applications: rabbit and poultry, shrimp salad. Pasta with crayfish.

Orange pink. Caramelised notes in the fragrance, orange peel, quince. An idiosyncratic palate at the same time oily and juicy, with vivid acidity, a trace of wood and garrigue savouriness, delicate mineral underpinning. A very distinctive wine whose body is countered by extract, very refreshing, great length.
