Bright, radiant straw yellow with persistent mousse. Inviting on the nose, with buttery cookies, yeast, hazelnut, rich aromas of candied fruit, a hint of toast and cold smoke on the finish. Rich and full-bodied on the palate, showing plenty of drive and a balanced finish with a subtly salty aftertaste.

Initially slightly reductive and bacon on the nose, with hints of yeast and cold smoke, then lemon zest, grapefruit, some mint and sea salt on the finish. Balanced and clear on the palate, with a harmonious mousse and crisp fruit, beautiful length.
