Tasting from 19.11.2021: Othmar Kiem, Simon Staffler

Intensely flint lemon yellow. On the nose, pronounced notes of wild herbs and meadow hay, along with chamomile blossom and tangerine peel, also wet wool and yeast. Fermented apple on the palate, fresh, animating, somewhat austere in structure, then quickly loses fruit in the back and becomes tart, very individual, slightly bitter on the finish.
