Tasting Notes
Clean on the nose: aromas from the successful wood maturation as well as lemon zest, green bell pepper and gooseberry. A light herbal spiciness on the palate, aromas of gooseberry meringue, again green bell pepper and lime. Balanced by fine acidity with a very good finish.
More about the tastingOn the nose, apple, leather, baked apple, raisin, notes of spontaneous fermentation. Some carbonic acid on the palate, full-bodied and dense, juicy, a salivating acidity, fresh and full of tension, a subtle chalky-mineral texture, still compact and almost monolithic, but already revealing style and character.
