Initially somewhat unorthodox with mustard seeds, herbal notes from the spontaneous fermentation, lime. Opens up with air. More relaxed on the palate with a fine mellowness and spiciness, the fruitiness blends in. Delicate acidity peaks, elegant and with chalky minerality.
