Tasting Notes
Day 1: Ethereal aroma, thyme, eucalyptus, smoked bacon, juniper, allspice, elderberry, licorice, mulberry, sloe, smoke. Tightly woven on the palate, grippy yet elegant tannins, fine acidity, still restrained in fruit with a spicy and long finish. Day 2: less ethereal aroma, slightly animal, smoked bacon, dried meat, wild berries, somewhat more closed aroma.
