Tasting Notes
Day 1: Golden yellow in the glass. The nose is smoky, spicy and tart. Opens slowly with air to ripe pome fruit aromas, walnut shell and meadow herbs. Ethereal freshness through notes of white pepper. Lining soft substance in the mouth, tropical fruit. Spicy phenolics, paired with lively acidity, pull the wine together on the palate and give it an exciting precision. Expressive minerality on the finish. Day 2: There is a noticeable change in the nose. Away from the astringency. Clearly more floral, meadowfoam, violets. Warm honey notes and a tropical edge. Warm spices such as curry and ginger. Less change in the mouth. Tropical notes are still very present. More tense mineral notes on the back. Acidity appears more integrated. As a result, it loses a few edges. Day 3: In the nose, it pulls back a little towards tartness. Smokier. Open, ripe fruit recedes somewhat into the background. Offers its spiciness. Minerality builds up more strongly. More pressure and tension on the palate as the fruit recedes somewhat. Phenolics more present. More terroir than on all other days.
