Tasting Notes
Very intensely smoky on the nose: pure shell limestone. But there are also berry varietal aromas, a beautiful, precisely harvested late harvest fruit. Silky texture on the palate, ripe acidity, seamlessly flowing, plump, enveloping and yet also with mineral tension. Needs the grand gastronomic opera to accompany it. Guinea fowl, pheasant, perhaps even lobster.
More about the tastingSlight notes of spontaneous fermentation, but then also complex, fanning out floral, mineral and herbal aromas: clover, smoke and red Kampot pepper. Viscous on the palate with great volume and mild phenolics behind the power. A delicate sweetness over everything. Needs time.
