The white wine Waalem Réserve Schleswig-Holsteinischer Landwein, vintage 2021 from the winery Weingut und Destillerie Waalem has been rated in 2022 by Ulrich Sautter with 92 Falstaff points.
A very nuanced, rich nose of bitter orange jam, pink grapefruit, salted liquorice and a pinch of wooden barrel. In the mouth, the wine is full-bodied with very good density. The striking acidity is buffered by a sweetness in a finely bittersweet twist. There's power and stature on show here, and with this level of spiciness and substance it virtually demands gastronomic use- and in that case, savoury seasoned poultry rather than fish.
