"Mash" carries the perfume of spontaneous fermentation, herbal, smoky, malty, ripe apricot, pear skin and yellow plum. Compact structure, agile acidity on the palate, not too weighty in the extract, but the noticeable phenolics create profile. Some citrus fruit, tart pear, emphatically dry, unaffected.
