Tomato and Burrata Salad

Food blogger Julian Kutos' summery salad, made with luscious ripe tomatoes and creamy burrata, is quick to prepare. As with all the simplest dishes, use the best ingredients you can find.

Julian Kutos

Ingredients (4 servings)
2 large ox heart tomatoes (800g), cored
2 balls of burrata
4 tablespoon(s) basil pesto
1 unwaxed lemon, zested on a fine grater
2 tablespoon(s) quality olive oil
1 handful basil leaves
pinch(es) salt
pinch(es) black pepper

Preparation:

  • Cut the tomatoes into thin slices (a serrated knife is best).
  • Arrange on four serving plates, season with salt and drizzle with a little olive oil.
  • Tear the burrata and arrange on top of the tomatoes.
  • Drizzle the pesto over the top. Sprinkle over the lemon zest, season with pepper and garnish with the basil leaves to serve.  

Tip:

Instead of ox heart tomatoes, you can any other tomato variety. Heritage varieties are good – just make sure they are ripe.
