Croque Monsieur à la »Harry’s Bar«

These bites have been served alongside drinks at the world's most famous bar for decades. The preparation for this ham and cheese toast is a bit elaborate, but you'll see: it's worth it!

Ingredients

Ingredients (6 servings)
300 g aged mountain cheese, grated
1 egg yolk
1 tablespoon(s) cream
1 tablespoon(s) Worcestershire sauce
6 slice(s) white bread
3 slice(s) ham, not smoked
1 large piece of butter
1 teaspoon(s) mustard powder
1 teaspoon(s) cayenne pepper
Olive oil
  • In a large bowl, mix and smooth out the cheese, egg yolk, cream, Worcestershire sauce, mustard powder, cayenne pepper, and black pepper. Evenly spread the cheese mixture on one side of the bread slices. Place ham on three of the slices, then top with the remaining bread slices, cheese side down, creating three square sandwiches.
  • Heat a heavy pan over medium to low heat, melt butter, and add a good splash of olive oil. When the fat is hot, fry the sandwiches on both sides until golden brown. Place them on kitchen paper to remove excess fat.
  • Trim the edges of the sandwiches with a very sharp knife and cut them into rectangular halves. Serve hot – preferably with a dry cocktail.
