Fried Fish Sandwich - Thai Style

Frozen fish can also make an excellent sandwich filling -just be sure to use plenty of herbs and a bold Thai-style sauce packed with flavor!

Ingredients (4 servings)
500 g Oven baked fish (approx. 4 fillets)
4 tablespoon(s) Sweet chili sauce
2 tablespoon(s) Thai fish sauce
2 piece(s) Organic limes
1 bunch Coriander
1 bunch Mint
2-3 piece(s) Mini snack cucumbers
1-2 Spring onions
1 Pointed bell pepper, red
4 piece(s) Hot dog buns
  • Preheat the oven according to the instructions on the oven baked fish packet. To make the sauce, mix the chili and fish sauce, grate in the zest of 1 organic lime and squeeze in the juice of ½ lime. Season to taste.
  • Pluck the herbs from the stalks. Cut the cucumber, spring onions and pointed peppers into thin slices and marinate in the sauce.
  • Bake the fish until crispy according to the instructions on the packet. Meanwhile, slice the hot dog buns and crisp them on both sides in a non-stick frying pan.
  • Spread the salad and half of the herbs on the buns, place the fish and the second lime cut into wafer-thin slices on top, top with the remaining herbs, drizzle over a little marinade and enjoy.
