Granita al Limone

Several ingredients can be combined to make lemon granita, which is refreshing and easy to make.

Ingredients (8 servings)
250 g sugar
500 ml water
500 ml lemon juice
4 organic lemons, zested
1 pinch(es) salt
  • Bring water to the boil in a saucepan, add the sugar and boil until dissolved, mix with lemon juice and zest and a pinch of salt, leave to cool.
  • Pour into a suitable metal or enamel mould and freeze for 1 hour.
  • Rough up the mixture with a fork. Freeze for a further 2 hours, then scrape through vigorously with the tines of a fork to make icy flakes.
  • Cover with foil and freeze until further use. Up to this point, the recipe can be prepared up to 3 days in advance.
  • Serve in scraped out lemon shells, halved and frozen.
