Good planning is therefore a must if you want to stop off at Konrad Robitza's new Eisenstadt wine bistro. The Burgenland Croat comes from a family of wine taverns in Oslip and previously ran the "Selektion Vinothek" in Eisenstadt. And now - five minutes' walk away - he is the landlord of the most popular restaurant in the provincial capital. The recipe: cuisine and wines with soul from the entire Pannonian region. In other words, Burgenland, Hungary, Slovakia, Croatia, Serbia and Slovenia. In the kitchen is Peter Prieler, a man who once trained at the legendary "Reisinger" in Pöttsching and then toured Burgenland's top kitchens. This is reflected not only in his skillful ideas, but also in his Instagram-worthy plate presentations. So the veal tartare (minced!) with all kinds of peas and hazelnuts is magnificent and also very good. Or waxy char with sliced cauliflower, red onion and tarragon - a starter with an elegance factor. The branzino comes from a small Istrian fishmonger, served with wild garlic risotto, beurre blanc, pickled radishes and deep-fried capers. The bread comes from the fantastic Kovászüzem bakery in Sopron and can thankfully also be taken across the alley. Just like the bottles on the wine shelf - Robitza has collected around 150 items. Of course, the bottlings of the newly formed group "Reimagine Pannonia" around Roland Velich, Hannes Schuster and Christian Tschida, who - just like Konrad Robitza - have a careful eye on the profile of Pannonia.
