Merum Priorati is also one of those producers in Priorat who have opted for vineyards in the seclusion of the village of Porrera. There are good reasons for this, as there are still parcels with vines that are up to 100 years old. However, this also means that the yields are extremely low; if you are lucky, you might get one kilo per vine, but often it is less. On the other hand, these grapes also harbour enormous ageing potential for long-lasting ripening. Garnacha, Carinena, Syrah and Cabernet Sauvignon grow here on a gifted terroir that is, after all, 400 million years old. These parcels are cultivated by hand and are also very laborious, as the vines are planted on steep terraces that simply do not permit mechanical cultivation. Merum Priotati owns over 100 hectares here, but only just under a quarter of this is planted with vines, which are spread over 3 parcels. The new winery, which is backed by Pere Ventura, an important producer of cava, has modern facilities with a particular focus on sustainability. But as far as the production of the wines is concerned, both feet are firmly planted on the ground of tradition. The wines undergo a maceration period of approx. 3 weeks and then mature for a period of 8 - 18 months in French oak barriques. The wines are bottled unfined and unfiltered so as not to rob them of their naturalness. There are two wines that have made the winery famous far beyond the country's borders, bearing the names "Inci" (= beginning) and "Desti" (= destination).
