Tasting from 04.09.2018: Ulrich Sautter

95-98 per cent Cabernet Franc plus a tiny bit of Merlot, vinified without added sulphur, with 30 percent whole clusters in the vat. Total sulphur 20 mg/l. Violets, cassis, blackberry pulp. The palate is dense with crumbly, grainy tannins and perfectly ripe acidity. Mineral, salty and almost soapy, with lots of juiciness. Vivid and long with fruit, the softness and structure are completely integrated, yet the wine seems fruit-driven without any greenness. Already accessible and yet with an inkling of potential. Immensely long.
