Cava Recaredo

What began in 1924 in a small cellar in the house of founder Josep Mata Capellades in the centre of the town of Sant Sadurni d'Anoia has developed into one of the most important and significant cava producers under the name Recarado. The name Recaredo has a reputation among gourmets and Spain fans. This is also due to the fact that the house has consistently stayed away from mass production, which other houses do. It was much more important for the family business to preserve the traditional methods of cava production and apply them without compromise. For example, the grapes are still carefully harvested and selected by hand, and the base wines are still fermented in wooden barrels. Cultivation is always carried out with deep respect for nature, so the logical consequence was Demeter certification as a biodynamic winery. Recaredo was also an advocate of the "Brut Nature" flavour, all sparkling wines are marketed without dosage. This requires the very best grape material, which is supplied exclusively by the indigenous grape varieties Xarel-Lo, Parellada and Macabeo, as well as Monastrell for the rosé. The international influences of Chardonnay and Pinot Noir, which other producers allow, are largely avoided here. While other houses are content with a maturation period of around 30 months for their sparkling wines, Recaredo only releases its sparkling jewels from the cellar after many years, which can be as long as 15 years for the very highest qualities. Recaredo has joined the very exclusive "Corpinnat" brand, which was created in 2017, along with 10 other producers. This is not a designation of provenance, but the use of this name requires compliance with rigorous provenance and quality criteria, including, for example, that the grapes must come exclusively from certified organic vineyards. Anyone who finds bottles of this high class quality with the name Recaredo should buy them quickly, as production is small and quantities are always limited.
