Every Variety Has Its Own Character

Not all potatoes are created equal. Whether waxy, all-purpose or floury, each variety offers a distinct balance of texture and starch. Waxy potatoes hold their shape beautifully, making them ideal for salads, boiled potatoes with dill or classic råraka. Floury varieties, by contrast, break down into a light, airy consistency—perfect for smooth purées, dumplings or soups. All-purpose potatoes sit comfortably in between, lending themselves to gratins, roasting and everyday cooking. Knowing these differences allows for a more precise and refined approach in the kitchen.

Traditional Varieties Add Depth and Nuance

Traditional varieties are quietly returning to Nordic kitchens. Potatoes in shades of deep violet, golden yellow or soft pink bring both visual elegance and nuanced flavour—nutty, earthy and subtly sweet. Often richer in plant compounds, they reflect a more ingredient-driven approach to cooking, where character and origin matter as much as technique.

Seasonality Shapes Flavour

The timing of harvest defines both texture and taste. Early potatoes, gathered in summer, are delicate and best enjoyed simply—lightly boiled and finished with butter and fresh herbs, as often seen across Scandinavian summer tables. Later varieties develop a fuller, more robust flavour, making them well suited to roasting, baking or longer storage. A firm skin that does not rub off easily signals maturity. Cooking with the seasons ensures the potato is always at its best.

Thoughtful Storage Preserves Quality

Potatoes thrive in cool, dark and well-ventilated conditions, ideally between 6 and 10 °C. Exposure to light causes greening, while excess moisture accelerates spoilage. Storing them in breathable containers and removing damaged specimens helps maintain both flavour and longevity. Cooked potatoes, once cooled, can be repurposed effortlessly—ideal for pan-fried dishes, gratins or salads the following day.

A Question of Preparation

Potatoes themselves are remarkably balanced: naturally rich in vitamin C, potassium and fibre, they are both nourishing and satisfying. Their nutritional profile depends largely on how they are prepared. Boiled or baked with the skin, they remain light and wholesome; excessive fat, however, quickly shifts the balance. When handled with care, the potato offers versatility, depth and quiet elegance in equal measure.
