Chef Daiya Kobayashi opens Koba Lounge in Malmö

Drawing on izakaya culture and his international background, the new restaurant focuses on seasonal Japanese flavours in an informal dining experience.

Kobayashi grew up in Tokyo, was educated in the UK, and spent much of his career across Southeast Asia in the nightlife industry before joining his family’s diamond and jewellery business. After moving to Malmö thirteen years ago, he discovered a new passion for cooking as a chef. During his time working at restaurant Quê, he began testing his soon-to-
be concept as a pop-up.

At Koba Lounge, the concept is built around three pillars: Japanese flavour profiles using local seasonal ingredients, omotenashi-style hospitality tailored to each guest, and the idea of ichi-go ichi-e, where every encounter is treated as unique.

Kobayashi felt Japanese cuisine was underrepresented in Malmö and wanted to create a space beyond sushi-focused concepts. The menu draws inspiration from izakaya culture, where simple dishes highlight seasonal produce, umami and balance, paired with drinks such as sake.

“For years, I’ve wanted to open my own place because I genuinely believe Malmö deserves at least one Japanese restaurant where sushi is not the focus. Japanese cuisine is so diverse and rich.” says Daiya.

The venue will also host events, including a July 2 listening session featuring Japanese jazz in collaboration with Malmö-based Resonans.
